I have a hard time eating breakfast most days so I’ve been trying to find easy but healthy recipes. This one takes a little time but is very easy and you can walk away from it to do other things. Which if you’re a parent you know that’s a plus.
I found this recipe on Pinterest but I’m not a huge fan of one of the ingredients they recommended and I made it a little bit differently. The original recipe calls for a few more ingredients but simple is better for me.
I started by adding the steel cut oats to a pan and added the milk and water. Stirred it and let it boil. You can also use some coconut oil and brown the oats before adding the liquid.
Then once it’s at a boil I reduce the heat to low, cover it for 20 minutes, and stir it occasionally. While it’s simmering I measure out my brown sugar and cut up my strawberries.
I love that I can just set the timer and go do other things while I wait for it to cook. I’m a big time multitasker, so I fed the baby while I waited for mine:)
Once its done simmering I add the brown sugar and the strawberries and cook it a little bit longer just to get the strawberries softer. The other recipe called for maple syrup instead of brown sugar, as well as cinnamon and nutmeg. You can get her full recipe here if you’re more interested in that:)
So here’s what you’ll need:
- 1 cup steel cut oats
- 2 cups water
- 2 cups almond milk or your preference
- 1/2 cup brown sugar
- 1 cup chopped/ sliced strawberries
- Add steel cut oats, water, and milk to pan, stir and cook to a boil.
- Once boiling reduce heat to low and cover for 20 min.
- Stirring occasionally.
- Once it’s at your desired consistency add brown sugar and strawberries.
- You may add other seasoning if desired.
- Makes about 4 servings.
